APPLE OATMEAL COOKIES
INGREDIENTS
1 1/2 cups all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp nutmeg
1/2 cup crisco
1/2 cup unsalted butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs, room temperature
1 tsp hot water
1 tsp vanilla
2 cups uncooked quick oatmeal
2 cups granny smith apples peeled and diced, approx. 2 medium
2 tsp unsalted butter
4 tsp brown sugar
1 cup powdered sugar
1 tbsp water
INSTRUCTIONS
Place the 2 tsp unsalted butter, 4 tsp brown sugar, and diced apples into a medium pot. Cook over medium-high heat, stirring occasionally, until tender and golden. Spread out on a paper towel to cool.
In a medium bowl, sift flour, baking soda, salt, and spices. Set aside.
Cream the butter, crisco, and sugars for 4-5 minutes.
Add the eggs, one at at a time.
Add the water and vanilla, beat well.
Add the dry ingredients, apples, and oatmeal. Mix only until combined.
Place dough in the fridge for 30 minutes.
Set oven to 375.
Place balls of cookie dough on a baking sheet and bake for 8-10 minutes.
Make glaze by mixing the 1 cup of powdered sugar with the tablespoon of water. Drizzle over cookies once they are cool.
