APPLE PIE BARS
INGREDIENTS
Shortbread Crust:
1/2 cup unsalted butter, room temperature
1/4 cup brown sugar
1/2 tsp vanilla extract
1 1/4 cup all purpose flour
Apple Filling:
3 large apples, peeled, cored and thinly sliced
2 tbsp flour
1/4 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
Topping:
1/2 cup all purpose flour
3/4 cup brown sugar
1 tsp cinnamon
1/2 tsp salt
6 tbsp butter, cut into cubes
INSTRUCTIONS
Preheat oven to 350 F. Line 8x8 pan with parchment paper, spray with cooking spray.
In a large mixing bowl, beat together the butter and sugar until light and fluffy, about 5 minutes.
Add vanilla and mix until combined. Add flour and mix until combined and dough is crumbly.
Press dough evenly into bottom of prepared pan. Bake for 14 minutes. Remove from oven and set aside. Do not turn off oven.
Filling:
Combine ingredients in a bowl until apples are thoroughly coated. Arrange apples on baked crust.
Topping:
In a medium bowl, mix together everything but the butter. With a pastry blender, cut butter in until the mixture is crumbly. Spread topping over apples in an even layer.
Bake uncovered at 350 F for 45 minutes.
Let cool.
