Black Cocoa Cookies

INGREDIENTS

  • 1 1/4 cup dark brown sugar, packet

  • 3/4 cup unsalted butter, softened

  • 1 2/3 cup bread flour

  • 2/3 cup black cocoa powder

  • 3/4 tsp baking soda

  • 1/2 tsp salt

  • 1 egg, room temperature

  • 1 tsp vanilla extract

  • 1/2 cup semi-sweet or bittersweet chocolate chips

  • 1/4 cup sugar

INSTRUCTIONS

  1. Preheat oven to 350 degrees F, line baking sheets with parchment paper and set aside

  2. With an electric mixer, cream together brown sugar and butter on medium speed until light and fluffy, about 3 minutes

  3. Add in the egg and the vanilla extract and beat well

  4. In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt

  5. Stop the mixer and add in the dry ingredients

  6. Mix on low until evenly combined

  7. Mix in the chocolate chips

  8. Dough will be dense!

  9. Add sugar in a small bowl

  10. Scoop 2 tbsp of dough and roll into a ball, and then roll it in sugar. Place on prepared baking sheet

  11. Bake for 10 minutes

  12. Cookies will crack once done baking

  13. Cool on a cooling rack

  14. Enjoy!

This dough becomes BLACK! This is how it looks before adding the dry ingredients. This is one of the stiffest doughs I have ever worked with so don’t worry that’s normal!

Look at that jet blackness. Don’t forget to stop mixing your dry ingredients once they’re all mixed together. If you over-mix after your flour is added you will get dry, hard cookies.

Roll them in sugar before baking!! Helps give that perfect crinkle on the outside.

They won’t spread too far but I always just do 9 at a time, just in case.

These cookies are the perfect chocolate lovers dream… they are so soft and gooey with a crispy outter edge that makes them disappear in 10 minutes :)
