BROWN SUGAR TOFFEE COOKIES
INGREDIENTS
2 1/4 cups all purpose flour
2 tsp baking soda
1 tsp cornstarch
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
3/4 cup unsalted butter, room temperature
1 1/4 cup dark brown sugar
1 large egg, room temperature
1 tsp vanilla extract
1 cup Heath toffee bits
Extra dark brown sugar for rolling cookies
INSTRUCTIONS
In a medium bowl, whisk together the flour, baking soda, cornstarch, salt, cinnamon, and nutmeg. Set aside.
Cream butter and sugar on medium speed for 5 minutes.
Add the egg and vanilla extract, and beat until combined.
Slowly add the dry ingredients and mix only until combined.
Stir in the toffee bits.
Place in fridge for 30 minutes.
Preheat oven to 350 F. Form tablespoon sized balls of cookie dough and roll balls in the brown sugar.
Place on lined baking sheet, and bake for 10 minutes.
Cool on a wire rack.
