CHOCOLATE PEANUT BUTTER BARS

INGREDIENTS

Cookie Dough:

  • 1 1/2 cups butter, room temperature

  • 1 1/2 cups (11.25 oz) granulated sugar

  • 1 1/2 cups (11.25 oz) dark brown sugar

  • 3 eggs, room temperature

  • 1 tsp vanilla extract

  • 1 1/2 cups (13.5 oz) creamy peanut butter

  • 4 1/2 cups (22.5 oz) all purpose flour

  • 1 tbsp baking soda

  • 3/4 tsp salt

Fudge:

  • 1 can (14 oz) sweetened condensed milk

  • 2 tbsp butter

  • Pinch of salt

  • 2 cups (12 oz) semisweet chocolate chips

  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350 F. Lightly grease a large, rimmed baking sheet (11x17 or 9x13) with nonstick cooking spray

  2. For the cookie dough, in a large bowl of a stand mixer, cream together the butter and sugars for 4 minutes.

  3. Add the eggs and vanilla, mix for another minute.

  4. Add the peanut butter and mix until combined. Stir in the dry ingredients just until combined.

  5. Reserve about 2 1/2 cups of the dough (20-25 oz) and set aside. Press the rest of the dough in the bottom and into the corners of the prepared pan.

  6. For the fudge, in a saucepan on the stove, combine the sweetened condensed milk, butter, salt, chocolate chips, and vanilla. Cook over medium low heat until mixture is melted and creamy.

  7. Pour the fudge filling over the cookie dough layer and spread evenly.

  8. Crumble the remaining cookie dough over the top in small pieces.

  9. Bake the bars for 15-20 minutes. They should not be browned. Let cool completely before serving.
