HOT CHOCOLATE COOKIES

INGREDIENTS

  • 1 cup unsalted butter, softened

  • 1 1/2 cups sugar

  • 2 eggs, room temperature

  • 1 tsp vanilla extract

  • 1/2 cup unsweetened cocoa powder

  • 2 3/4 cup all purpose flour

  • 1 1/2 tsp cream of tartar

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/3 cup sugar, for rolling

  • 2 tbsp cinnamon, for rolling

INSTRUCTIONS

  1. Preheat oven to 350 F. Line baking sheets with parchment paper.

  2. In a stand mixer, beat butter and sugar for 5 minutes.

  3. Add the eggs and vanilla, mix well.

  4. Add the cocoa powder and flour, do not mix. Make a well and add the cream of tartar, baking soda, baking powder, and salt and blend into flour. Mix on low until combined.

  5. Place in fridge for 30 minutes or bake immediately.

  6. Mix the sugar and cinnamon in a bowl. Form dough balls and roll in sugar/cinnamon mixture, then place on baking sheet.

  7. Bake for 12 minutes.

  8. Cool on wire rack.
