HOT COCOA COOKIES
INGREDIENTS
Cookies:
1/2 cup unsalted butter, room temperature
1 1/2 cup semi-sweet chocolate
1 1/2 cup all purpose flour
1/4 cup cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
1 1/4 cup brown sugar
3 large eggs
1 1/2 tsp vanilla extract
12 large marshmallows cup in half
Chocolate Icing:
2 cups powdered sugar
4 tbsp unsalted butter, melted
1/4 cup cocoa powder
1/4 cup hot water
1/2 tsp vanilla extract
Christmas sprinkles
INSTRUCTIONS
In a double boiler, melt the butter and chocolate, stirring frequently. Once melted, set aside to cool.
In a medium bowl, whisk together the flour, cocoa, powder, baking powder, and salt.
Beat the sugar, eggs and vanilla on low speed until combined.
Add the cooled chocolate and mix until combined.
Gradually add in the flour ingredients and mix until combined.
Scoop the dough into a bowl and cover. Place in fridge for at least 4 hours.
Preheat oven to 325 F. Line a cookie sheet with parchment paper.
Scoop the batter into dough balls, and place on cookie sheet
Bake cookies for 10 minutes.
While cookies are baking, cut marshmallows in half.
Once cookies are baked, place a marshmallow into the center of the cookies and lightly press down.
Place cookies back into the oven for another 2 minutes.
Place on a wire rack with a paper towel at the bottom.
For the icing, combine all ingredients into a large mixing bowl and mix until combined.
If the icing is too thick, add hot water to thin it out.
Drizzle the icing over top of the marshmallow on the cookie.
Sprinkle with Christmas sprinkles.
